Ingredient list:
3eggs
1cup veggie oil
2cups sugar
2tsp vanilla
2tsp baking soda
2cups flour
1tsp salt
1tsp cinnamon
1tsp allspice (chinese 5spice would also be good)
5carrots quartered
1cup shredded carrots
1cup applesauce
1 1/2tsp lemon juice
1cup crushed nuts
Preheat oven to 350
Lay parchment paper on the bottom of a greased 13x8 cake pan.
Cook quartered carrots covered in water. Boil for 15min. Drain, cool, and mash. Set aside.
Beat eggs.
Add oil, sugar, vanilla, and mix.
Combine flour, baking soda, salt, cinnamon, allspice.
Add to wet and mix.
Add 2 cups mashed carrots, lemon juice, grated carrots, and applesauce, Mix.
Fold in nuts if desired.
Pour into pan and spread evenly with spatula.
Bake for 40-50 min probably.
Toothpick check at 40 and test every 5min until toothpick comes out clean.
